Meringue recipes with a sugar substitute for diabetics

Sweets are not only delicious food, because the glucose they contain becomes an important substance used by the body to produce energy. However, patients with diabetes mellitus are prohibited from using simple carbohydrates, otherwise the level of glycemia is rapidly increasing.

Sugar substitutes will become a way out, the market offers an unimaginable variety of such products, sweeteners can be of different types, both natural and synthetic.

It should be borne in mind that natural sugar substitutes are more caloric than artificial, per day it is allowed to consume no more than 30 grams of the substance. Synthetic supplements, though low-calorie, overdose threatens to breakdown the digestive process.

Meringue recipe with stevia

The classic recipe for meringue provides for the use of powdered sugar, due to this ingredient the protein becomes light and airy. To achieve a similar result using xylitol, stevioside or another sweetener is impossible. For this reason, not to do without adding a small amount of vanilla sugar.

Meringue with sweetener is best cooked with natural substances, ideally take stevia, it perfectly imitates the taste of sugar, also contains minerals and vitamins necessary for adequate functioning of the body of a diabetic. To diversify the proposed dessert recipe, it will not be superfluous to add a pinch of cinnamon to it.

You will need to prepare the components: 3 egg whites (necessarily chilled), 0.5 tablespoons of stevia (or 4 tablets), 1 spoon of vanilla sugar, 3 tablespoons of freshly squeezed lemon juice. Together with lemon juice, the protein is intensively whipped with a blender until stable peaks appear, then stevia and vanillin are injected without stopping.

In the meantime you need:

  • cut a sheet for baking;
  • grease with refined vegetable oil;
  • using a pastry bag to put on it meringue.

Not a problem, if a diabetic does not have a special bag for desserts, instead of him use a regular bag of polyethylene, cutting off a corner in it.

Bake dessert is recommended at an oven temperature of not more than 150 degrees, the cooking time is 1.5-2 hours. It is important not to open the oven all this time, otherwise the meringue may fall.

Instead of stevia extract, it is allowed to take sweetener from the Fit Parade brand.

Meringue with honey

You can make bezheski with honey instead of sugar, the technology is not very different from the first recipe. The difference lies in the fact that the bee product is administered together with a sugar substitute. It will be necessary to take into account that when heated to a temperature of 70 degrees and above, honey will lose all properties that are beneficial to humans.

For the recipe, take 5 cooled egg whites, as many spoons of liquid natural honey. If there is no liquid honey, melt the candied product in a water bath and then allow to cool.

To begin with, whip the whites in a separate bowl, the dishes also do not hurt to cool slightly. At this stage there is no need to get a strong foam, because you still need to enter honey. It is added in a thin stream, gently mixed, not allowing sitting protein foam.

The baking dish is smeared with refined vegetable oil, spread the meringue, baked at a temperature of 150 degrees for 60 minutes. When the time is over, dessert is left in the oven for at least another 20 minutes, this will keep the airiness of the dish.

Marshmallow soufflé, crispy meringue, Ducan marshmallow

Another option for a delicious dessert allowed for diabetes is a zephyr soufflé. It will require 250 g of low-fat pasty curd, 300 ml of milk, 20 g of gelatin, sugar substitute, aromatic syrups, and citric acid at the tip of a knife.

First, 20 g of gelatin are soaked in 50 g of water, the other components are mixed separately (except for cottage cheese), slightly heated in a water bath. After add swollen gelatin, gently whisk all the ingredients, add the cottage cheese.

The resulting mixture is sent to the freezer for 30 minutes, and as soon as the souffle grabs, it is whipped with a mixer for 5-7 minutes. The finished dessert is served with mint leaves or berries.

With a sugar substitute in violation of carbohydrate metabolism, you can make crispy meringue without sugar, take a couple of chilled proteins, half a teaspoon of vinegar, a teaspoon of cornstarch and 50 g of sweetener.

The technology is as follows:

  1. protein shake with sweetener;
  2. add starch and vinegar;
  3. continue beating up steep peaks.

Then on the silicone mat or oiled parchment paper spread bezeki, sent to the oven for 40 minutes. The oven must be preheated to a temperature of 100 degrees, and after switching off, the meringues are not reached for another hour, until it cools completely. This will allow the dessert not to lose its shape and dry well.

Very tasty for a patient with diabetes will be marshmallows, cooked under the Dukan diet. Ingredients are:

  • glass of water;
  • 2 teaspoons of agar agar;
  • 2 squirrels;
  • sugar substitute;
  • juice of half a lemon.

The sweetener can be taken any, the Milford sugar substitute is best in this case, it is equivalent to 100 g of white sugar.

This recipe can be called a classic, but it does not use fruit. In cold water, dilute the agar-agar, stir, bring to a boil, and then pour in the sugar substitute.

Meanwhile, the chilled protein is whipped to a stiff foam, add lemon juice. The boiled water is set aside from the stove, the protein is quickly transferred into it, and vigorously whipped with a mixer for a couple of minutes.

The mass is allowed to infuse to thicken the agar-agar, proceed to the preparation of marshmallow. Protein mixture is spread on parchment, silicone mat or poured into small molds, the whole shape, and then cut into a candy. You can replace lemon juice with vanilla or cocoa.

Dessert will be fully ready after 5-10 minutes, to speed up the process, you can put it in the fridge. Marshmallow will not cause an increase in the level of glycemia, will delight the person with diabetes with his taste, will not harm the figure and will increase the mood. This dish is well suited for weight loss, it is allowed to give children.
