So, jelly for diabetics is a complete breakfast that will saturate the body with energy for a long time, you just need to properly prepare it, taking into account the glycemic index of products. Below is a description of what the glycemic index is, which products for making sugar free jelly are allowed, and recipes for fruit and curd jelly are given.

Glycemic index

Diabetes mellitus is the strictest dietary control. In this case, you must follow the table of products, with an indication of the glycemic index. The glycemic index is an indicator that affects blood sugar levels when a particular product is consumed.

GI is divided into three levels - low (up to 50 IU), medium (up to 70 IU), high (from 70 IU or more). So, products with low GI are allowed in any quantity, with medium - it is possible occasionally, but food with high GI is prohibited.

In addition, it depends on the heat treatment of food whether GI increases. All dishes should be prepared only in such ways:

  1. Boil;
  2. Stew;
  3. Steamed;
  4. In the microwave;

More recently, scientists have found that jelly does not have a detrimental effect on blood sugar levels. The main part of it is proteins that are vital for a disease such as diabetes. Gelatin itself improves the body's metabolic processes, strengthens hair and nails.

Any diabetic product must contain ingredients for its preparation with a low glycemic index. This is a pledge not only delicious, but also healthy.

Jelly requires such products:

  • Black currant - 15 U;
  • Red currant - 30 U;
  • Apple - 30 U;
  • Strawberries - 33 U;
  • Malina - 32 U;
  • Cherry - 22 U;

Any fruit jelly is made from all kinds of fruits, sweetener (stevia) and gelatin. The choice of fruit depends only on the taste preferences of the person. But you should know that in no case can gelatin be boiled, and more, it is better to choose instant gelatin, which, after soaking, is immediately poured into fruit juice or juice.

The first and rather simple recipe for jelly: cut strawberries, pears and cherries into boil for two minutes in one liter of water. Then remove from heat and add sweetener if the fruit is not sweet. Put the fruit slices on the bottom of the molds, pour the dissolved gelatin into the fruit juice and pour everything into the molds. Clean in a cold place to full freeze.

Instant gelatin is taken from a proportion of 45 grams per liter of water. Soaked in warm water just before cooking desserts.

The second recipe is more complicated, but it will perfectly decorate any holiday table. These ingredients will be needed:

  1. 100 ml of skimmed milk;
  2. Sweetener;
  3. 1 lemon;
  4. 2 oranges;
  5. 400 ml of cream with fat content up to 20%;
  6. 1.5 bags of instant gelatin;
  7. Vanillin, cinnamon.

First you need to warm the milk to room temperature and pour 1 bag of gelatin into it. Then you should warm the cream and add sweetener to taste, vanilla, cinnamon and finely grated lemon peel.

The main thing is that the juice does not get into the cream, from this they instantly roll up. Then mix the cream and milk. The liquid is poured into molds up to half so that there is room for fruit jelly. Dairy panakota clean in the fridge.

In the juicer, squeeze out two peeled orange. If there is no such unit at home, you will have to make the juice manually and then strain it through a sieve. It is important that some pulp remain in the juice. Then pour 0.5 packs of gelatin into the juice, when the fruit jelly starts to stiffen, pour it into the milk panakota.

Any jelly dessert can be decorated with fruits and berries, after laying them on the bottom of the mold.

Curd jelly

Cheese jelly is cooked as fast as fruit jelly. True, the list of ingredients is somewhat broader. But such a dessert perfectly diversifies not only everyday, but also festive table.

For the successful preparation of such jelly you need to know an important rule - the calculation of instant gelatin will be slightly different, because the thicker the consistency, the greater the amount of gelatin required.

For kefir-curd jelly such products are necessary:

  • Kefir 2.5% - 350 ml;
  • Cottage cheese - 200 grams;
  • 15 grams of gelatin (2 tablespoons without a slide);
  • Sweetener;
  • Raspberry (fresh or frozen);
  • Peel of one lemon.

In a small amount of cool water pour gelatin and stir, after half an hour put in a water bath and stir until the lumps are completely dissolved. Leave to cool.

Beat curd on a blender or grind through a sieve and add sweetener dissolved in a teaspoon of water. Then mix the warm kefir with cottage cheese and pour the gelatin into it. Optionally, you can rub lemon zest into cottage cheese, to impart a more savory jelly taste.

Raspberries can be whipped on a blender and mixed with kefir-curd mass, and you can put mashed potatoes on the bottom of the mold. Here the choice is only for personal preferences. Remove the jelly in the cold for at least three hours.

Serve on the table, decorating the curd jelly with fruit and sprinkling with cinnamon.

Unsweetened Yogurt Jelly

Yogurt jelly is not only tasty, but also useful for the gastrointestinal tract. To cook such a diet dessert without sugar is possible even for beginners in cooking. The main thing is to follow all the recipe recommendations.

Such a jelly from yogurt is useful not only for diabetics of the first and second types, but also for children, due to its naturalness and nutritional value.

To make five servings, you need the following ingredients:

  • 15 grams of instant gelatin;
  • 200 grams of pasty curd;
  • Sweetener, at the rate of three tablespoons of regular sugar;
  • 100 grams of strawberries (fresh or frozen);
  • 400 ml unsweetened yogurt;
  • 100 ml cream with a fat content of not more than 20%.

Pour instant gelatin with warm water and let it brew for five minutes, then put in a water bath and stir continuously to ensure that the mass becomes homogeneous. Remove from heat and allow to cool.

Beat curd in a blender with raspberries, or rub through a sieve. Add cream, sweetener, yogurt - mix well and pour gelatin. Stir again and spread the mass in molds. Remove to a cold place for three to four hours, until fully frozen.

Serving jelly is possible not only in whole portions, but also cut into portions. To do this, advance the mold with a cling film beforehand. And only then spread the mixture.

It will also add a delicacy to the dish and serve it - jelly laid out on plates can be decorated with sliced ​​fruit, cinnamon sticks or cocoa powder with cocoa powder. In general, the matter remains only for fantasy.
