Cucumber is a very popular vegetable. He is fried, boiled, salted, pickled, cooked with him salads, rolls, cold soups, various snacks and so on. On the culinary sites a huge number of recipes of dishes in which there is this familiar to the Russians vegetable. It belongs to low-calorie foods, so it helps diabetic patients diversify the menu. One medium-sized fruit (approximately 130 grams) contains 14-18 calories. For comparison (of the vegetables shown to diabetics): in 100 grams of zucchini - 27 kilocalories, in different types of cabbage - from 25 (white cabbage) to 34 (broccoli), radish - 20, green salad - 14.
Young fruits have the highest nutritional value. The water content in them ranges from 94 to 97%, protein - from 0.5-1.1%, fats are absent.
The chemical composition of cucumbers,% in 100 grams:
- water - 95;
- carbohydrates - 2.5;
- dietary fiber - 1;
- proteins - 0.8;
- ash - 0.5;
- Fat - 0.1;
- cholesterol - 0;
- starch - 0.1;
- organic acids - 0.1.
In the case of sugar disease, calorie content, especially the amount of carbohydrates, is crucial for food choices. This indicator significantly affects blood sugar levels. Cucumbers are distinguished by their low content (see list above): 5 grams per 100 grams of product. Endocrinologist Richard Bernstein, author of The Solution for Diabetics, calculated that 1 gram of carbohydrate boosts sugar by about 0.28 mmol / L. Simple calculations demonstrate that eating one fresh fruit is not capable of causing a sharp onset of hyperglycemia (the calculated increase is 0.91 mmol / l). Of course, if the patient has no individual intolerance to the product.
In the plant described there are no “fast” sugars. Carbohydrates in it belong to the "slow". An important indicator is directly associated with this concept - the glycemic index (GI). In a cucumber it is equal to 15 and is low.
Thus, diabetics may include the described fetus in the diet. The only limitation is comorbidities, in particular, pathologies of the heart, vessels and urinary system, for which it is necessary to limit the fluid entering the body. Diseases of the heart and kidneys are frequent companions of diabetes, therefore one should consult with a cardiologist and a nephrologist. It is important to remember: each disease requires a special diet. What is allowed with elevated blood sugar may be forbidden if the cholesterol is too high. Combining food restrictions in the presence of several ailments is a very difficult task. In any case, you must comply with the measure: a small portion of salad at dinner is good, a kilogram of it is bad. Overeating even good food is contraindicated in diabetes.
A medium-sized cucumber salad contains no more than 6-7 grams of carbohydrates and 35-45 kilocalories.
But do not rush to go to extremes and make this useful fruit the basis of the diet. In the absence of alternative products, consuming it alone can cause gastrointestinal upset. Do not forget: cucumber - a diuretic, an excess of which at dinner can cause discomfort at night.
Use for gestational diabetes
Pregnancy, in terms of endocrinology, is a state of physiological insulin resistance, provoking disorders of carbohydrate metabolism. This means that in the body of a woman at any time there may be a failure, which threatens to increase the sugar. The so-called gestational diabetes in the future increases the risk of developing types I and II pathology, obesity, cardiovascular diseases in the mother and fetus, and also increases the likelihood of an adverse pregnancy outcome. Therefore, a woman should carefully follow a diet, excluding easily digestible carbohydrates. Especially if endocrine disorders are diagnosed. But how to combine a low-carb diet and the need to get vitamins, micro- and macronutrients important for the body with food? Of course, choose foods that combine low glycemic index and rich mineral composition. Cucumber contains almost all vital vitamins (mg%):
- carotene - 0.06;
- thiamine - 0.03;
- Riboflavin - 0.04;
- niacin - 0.2;
- ascorbic acid -10.
The fruits are also rich in sodium, potassium, magnesium, calcium, phosphorus, iodine.
The main advantage of cucumber for pregnant women with gestational diabetes is a high content of potassium, magnesium and iodine in combination with low calorie content.
The first trimester of pregnancy is an important period for the development of the central nervous system of the unborn child. The complete formation of fetal brain structures in the early stages depends on thyroxin synthesized in the mother's body. Iodine deficiency in women can cause dysfunction of the thyroid gland of the baby and even irreversible damage to the brain. A lack of potassium and magnesium is fraught with pathologies of the heart rhythm.
Content of potassium, magnesium and iodine in vegetable crops cultivated in central Russia
|Carbohydrates,%||Magnesium mg%||Potassium, mg%||Iodine, mcg%||Calorie, kcal|
In diabetes and gestational type during pregnancy, as the natural sources of potassium, iodine and magnesium, cucumber, radishes and lettuce are most preferred among other vegetables familiar to the inhabitants of our country. Thus, potatoes rich in potassium, is contraindicated in high sugar due to the high content of carbohydrates. For a similar reason, carrots are not recommended due to the substantial presence of magnesium.
A salad of two fresh cucumbers contains potassium 20% of the daily need of an adult, magnesium - 10%.
Greenhouse or unpaved
Vegetable growing technologies are reflected in the content of various substances in them (see table):
|Chemical composition||Type of cultivation|
|Alimentary fiber, %||0,7||1|
|Vitamin C, %||7||10|
When analyzing the chemical composition of cucumbers, the traditional point of view, according to which ground vegetables are better than greenhouse ones, is not confirmed. And in those, and in others, practically the same amount of water, proteins and fats, but less carbohydrates in greenhouse vegetables, respectively, they are preferable with a low-carb diet. At the same time characterized by a significant content of potassium. But the remaining vitamins and macronutrients are more in the ground: vitamin A - 3 times, B2 - 2, calcium and vitamin C - 1.5.
Grown in greenhouses, no worse than ground. Each method has advantages and disadvantages.
Marinated or salted
To understand what types of canning are useful, just look at the traditional recipes. The following table of salt, vinegar and sugar content (per 1 kg of cucumber) is given in the "Book about tasty and healthy food":
|sugar mg||salt mg||vinegar, ml|
As you can see, sugar is present only in one form of cooking - canned stew. The rest, at first glance, seem acceptable to the diet table, because they do not contain sugar. However, for any conservation you need a lot of salt. So, the amount of sodium (mg% per 100 grams) is in cucumbers:
- fresh greenhouse - 7;
- fresh groundwater - 8;
- salted - 1111.
The difference ranges from 140-150%! But the restriction of salt is the basis of any diet, regardless of the human disease. It is no coincidence that there is no canned food in any culinary book in the "Medical Nutrition" section. Accordingly, neither salted, nor pickled, let alone canned vegetables can be classified as “permitted” in diabetes. In addition, in processed form, they contain many times less vitamins and minerals compared to fresh. For example: vitamins A and C in pickles are 2 times less than in just harvested (60 and 30 μg, 5 and 10 mg, respectively), phosphorus is 20% lower (24 and 42 mg). Cucumber in canned food loses its main value - a combination of a small amount of carbohydrates and a lot of vitamins and minerals.
In Russia, it is customary to sprinkle with salt even fresh cucumbers. But in this case, a person pretty quickly gets used to eating vegetables without the "white poison", each time increasing its quantity.
Fresh cucumbers are recommended for any type of diabetes due to their low carbohydrate content and rich vitamin and mineral composition. During pregnancy, their use contributes to the body receiving potassium, calcium, magnesium and iodine. These micro and macro elements are necessary for the future mother and child. Greenhouse and soil equally useful. Canned cucumber is not suitable for diet, because they contain a lot of salt.
I have type 2 diabetes and are overweight. Is it possible to arrange cucumber fasting days from time to time?
With diabetes, you should not experiment with nutrition. Now you are shown only one type of diet - low-carb. Any other, including monocomponent, are allowed solely on doctor's prescription. But do not worry: if you do not overeat and use only products allowed by the doctor, your weight will decrease.
I love canned cucumbers. I know that they are not recommended for diabetes, but I found a jar in the store, it seems there is no sugar in the composition. Do you think such cucumbers can be allowed at least sometimes?
Of course, if you occasionally use "forbidden" products, it is unlikely to significantly affect your health. But think, today you will eat one not recommended product, tomorrow another, then a third ... What do you get in the end? Daily violation of the diet. And do not trust the inscriptions on the packaging. Canned cucumbers attract thanks to the combination of salinity, acid and sweetness. There are various types of sugars that allow you to not use this word in the composition of the product, but which can also lead to hyperglycemia. For example, carob extract, corn syrup, lactose, sorbitol, fructose. So if there is no sugar in the recipe, this does not mean that there is no sweetness in the dish.
Diabetes has deprived me of one of the pleasures of life - going to a restaurant. Even when I cannot refuse an invitation, for example, on the birthdays of loved ones, they have a terrible feeling of guilt that I cannot eat with them. What to do? After all, the restaurant menu never indicates whether sugar is in the dish. But it can even be added to a vegetable salad with cucumbers.
The disease should not deprive a person of the pleasure of living and communicating with friends and relatives. You can use the advice of Dr. Bernstein. In order to understand whether there are simple sugars in the finished dish, you can use test strips to determine glucose in the urine. You need to put some food (soup, sauce or salad) in your mouth, chew it to mix with saliva, and put a drop on the test strip (of course, try to do it imperceptibly if you are in a restaurant). Coloring will show the presence of glucose. Its more than the color brighter. If the coloring is insignificant - you can afford a little. This technique "does not work" only with milk, fruit and honey.
